Apple Banana Bread

Banana bread is a huge crowd pleaser – it’s just so moist and delicious. But when you throw grated apples into the mix you’re opening the doors for a new winner! Not only are you adding more fiber and nutrients, but apples help hold even more moisture into the recipe, leaving a healthy bread great for slathering with peanut butter, almond butter, or even a small bit of cream cheese with a sprinkle of cinnamon.

This recipe is made with half whole wheat flour, omega-3-packed canola oil, and vitamin-B and fiber filled wheat germ. So if you’ve got a couple old apples and bananas lying around… what are you waiting for? Mix up some love!

TIP: Only fill the bread pan half way or a tad more. Too much batter can lead to the loaf cooking unevenly and the bottom may not rise or cook fully. If you have leftover batter, simply make another smaller loaf, or divide among muffin tins! Ingredients

  • 2 apples, grated (skin and all!)

  • 2 over ripe bananas, mashed

  • 1 cup wheat flour

  • 1 cup white flour

  • ½ cup wheat germ

  • ½ cup sugar

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 tsp vanilla

  • 1 egg

  • ¼ cup canola oil

Instructions

  1. Preheat oven to 350F. Spray a large bread baking dish with spray canola oil.

  2. Whisk egg then add the oil, vanilla, and mashed banana.

  3. In a separate medium sized bowl, mix together all dry ingredients. Then add the banana mixture plus the grated apples and gently combine.

  4. Pour into the prepared bread dish and bake for 55 or 60 minutes, or until a toothpick comes out clean.
