Baked Eggplant Fries

What else can you make with eggplant other than parm and ratatouille? Fries! But not just any fries; these are baked, crisp, truly delicious and super easy. Plus you can bet these are more nutritious than deep fried potatoes by leaps and bounds.

Baked Eggplant Fries Author: Adapted from iwantcake.com Prep time: 45 mins Cook time: 30 mins Total time: 1 hour 15 mins Serves: 4 Crisp, delicious, and healthy; a great side dish for a formal sit down dinner or summer cook-out.

Ingredients

  • 1 eggplant, top cut off, skin left on, and cut into thin ½ inch thick slices (like shoestring fries)

  • ⅓ cup whole wheat flour

  • Spray olive oil (or about 3 to 4 Tbsp)

  • 1 tsp garlic powder

  • 1 tsp oregano

  • ½ tsp cumin

  • ½ tsp salt

  • ⅛ tsp cayenne pepper

Instructions

  1. Preheat oven to 500F.

  2. Cut eggplant into ½ inch slices, similar to shoestring fries. Place in a large bowl of ice water and let sit for 30 to 60 minutes. Remove from water and pat dry.

  3. Brush or spray eggplant fries with olive oil.

  4. Mix together flour, garlic, oregano, cumin, and salt in a shallow bowl.

  5. Roll eggplant in flour mixture. Place a cooling rack on top of a baking sheet, then place eggplant fries on cooling rack, leaving a small space between each.

  6. Bake for 30 to 35 minutes, until golden bown and crispy.
