  • Bananas provide fiber, antioxidants, vitamin C, vitamin B6, Potassium, Manganese.

  • Low fat cottage cheese is a protein power house and offers riboflavin, vitamin B12, phosphorous, selenium, and a bit of calcium. But beware – some cottage cheeses are very high in sodium.

  • Low fat milk: get your calcium and protein here!

  • Whole wheat bread, depending on the type, can provide fiber, selenium, magnesium, and even omega-3 fatty acids (if you get the type with ground flax) or added protein.

  • Coconut? Just plain delicious.

Banana Coconut Whole Wheat Bread Pudding

Ingredients

  • 5 slices whole wheat bread, cut into 1" cubes

  • ⅔ cup low fat or fat free milk (or soy milk)

  • 2 large, ripe bananas - mashed

  • 1 cup low fat cottage cheese

  • ⅓ cup shredded coconut

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • Optional: A drizzle of maple syrup


Instructions

  1. Preheat oven to 350F

  2. Mix together all ingredients into a medium sized bowl. Scoop mixture into a 9x9 inch baking pan.

  3. Bake for 30 minutes.
