Low fat cottage cheese is a protein power house and offers riboflavin, vitamin B12, phosphorous, selenium, and a bit of calcium. But beware – some cottage cheeses are very high in sodium.

Whole wheat bread, depending on the type, can provide fiber, selenium, magnesium, and even omega-3 fatty acids (if you get the type with ground flax) or added protein.
Coconut? Just plain delicious.

5 slices whole wheat bread, cut into 1" cubes
⅔ cup low fat or fat free milk (or soy milk)
2 large, ripe bananas - mashed
1 cup low fat cottage cheese
⅓ cup shredded coconut
1 tsp cinnamon
½ tsp nutmeg
Optional: A drizzle of maple syrup
Preheat oven to 350F
Mix together all ingredients into a medium sized bowl. Scoop mixture into a 9x9 inch baking pan.
Bake for 30 minutes.
