Banana Peanut Butter Quick Bread

I love banana bread, and since we almost always have a surplus of over-ripe bananas – it’s a quick bread that I make pretty often. Amazingly, I hadn’t yet added peanut butter until now. And boy is it a wonderful combination! Banana Peanut Butter Quick Bread Prep time: 15 mins Cook time: 60 mins Total time: 1 hour 15 mins Serves: 20 Moist banana bread with peanut butter goodness. Makes 2 loaves.

Ingredients

  • 1 c rolled oats, uncooked

  • 1 c whole wheat flour

  • 1 c white flour

  • ¾ c brown sugar

  • ½ c white sugar

  • ½ cup apple sauce

  • 2 eggs

  • ¼ c canola oil

  • 4 ripe bananas, mashed

  • ½ c natural peanut butter

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp salt

Instructions

  1. Preheat oven to 350F. Spray two 8" bread pans with canola oil.

  2. Mix together dry ingredients in a medium bowl. In a separate larger bowl, mix together wet ingredients.

  3. Add dry to wet and mix until just combined.

  4. Divide batter between the two bread pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean.
