I used to think making pulled chicken was difficult. Or would take a long time.
I mean, there must be some crazy technique that goes into cooking something so dang delicious!
But no.
It’s easy as:
Saute chicken
Add BBQ sauce
Rip apart with a fork
All in about 15 minutes of cooking. Finito!
Seriously. How awesome is 15 minute pulled chicken? Very.
And with a sweet, crunchy ‘n’ tangy slaw to boot.

Ingredients
2 chicken breasts, cut into 1 inch pieces
⅓ cup BBQ sauce (your favorite flavor)
2 tsp olive oil
½ tsp pepper
SLAW:
1 large apple (red, crispy, and sweet!), cut into matchsticks {Julienned}
½ english cucumber, seeds cut out, juilienned
3 scallions, green part only, thinly sliced
¼ cup plain Greek yogurt
2 Tbsp honey
1 Tbsp cider vinegar
2 tsp Dijon mustard
a couple cracks of salt and pepper
2 large or 4 small whole wheat
Instructions
In a medium saute pan, heat oil over medium-high heat and add chicken. Crack pepper over chicken and cook, browning all sides, for about 8 minutes.
Add BBQ sauce, cover, and simmer for another 8 minutes, or until chicken is cooked through.
Using 2 forks, shred chicken (while still in the pan with the delicious bbq sauce!). Then mix with bbq sauce in pan over low heat to warm.
In a small bowl, whisk together yogurt, honey, vinegar, mustard, salt and pepper - then pour over scallions, apple and cucumber, toss to mix.
Top a bun with chicken, slaw and enjoy!
