Let’s just say that blackened salmon is called that no only because it’s spice coating is dark in color, but also because it’s Spicy. Yes, Spicy with a capital ‘S’.
But when you have it over a bed of delicious, creamy corn grits, the heat is cut and the combination is really something special.
Yes, I called corn grits special. I’m from the south, what do you want?

Blackened Salmon
Prep time: 8 mins Cook time: 8 mins Total time: 16 mins Serves: 4
Spiced blackened omega-3 packed salmon
Ingredients
1 salmon filet (about 1 pound), skin cut off
2 Tbsp olive oil
1 tsp cayenne
2 tsp paprika
1 tsp thyme
1 tsp oregano
½ tsp salt
Instructions
Mix together the cayenne, paprika, thyme, oregano, and salt in a small bowl. Pat onto both sides of the salmon.
Heat a cast iron skillet over medium heat and add oil. Heat until the oil is smoking, then turn off the heat.
Add the fish and turn the heat back on. Cook for 3 minutes.
Turn the first with a spatula and cook for another 3-5 minutes (until the fish reaches your desired doneness).
