Breakfast Pumpkin Bread Pudding

Who says bread pudding has to be unhealthy – or only for breakfast? This breakfast bread pudding breaks all the rules: it’s packed with protein, fiber, and antioxidants AND it helps to start your day off right with plenty of energy to last through the morning. Delicious!

Breakfast Pumpkin Bread Pudding

Prep time: 5 mins Cook time: 30 mins Total time: 35 mins Serves: 3 to 4

Bread pudding for breakfast? Sign me up! This bread pudding is packed with protein, fiber, and antioxidants - helping you to start your day off right.


  • 1 cup low fat cottage cheese

  • 1 cup pureed pumpkin (canned)

  • ½ cup skim milk (or soy)

  • 6 slices whole grain bread, cut into small cubes

  • ⅓ cup wheat germ

  • 3 Tbsp maple syrup

  • 1 tsp pumpkin pie spice


  1. Preheat oven to 350F.

  2. Mix together all ingredients in a medium sized bowl. Then spread into a prepared 6" x 8" baking dish.

  3. Bake for 30 minutes.

  4. Serve with fruit! We had ours with a ripe, juicy plum.
