Broccoli, like cauliflower, can get to be a ‘boring’ veggie. This recipe adds apricots, walnuts, and the tang of yogurt for a deliciously different way to eat broccoli.
Experiment with the recipe to adjust for your taste! Substitute another dried fruit in place of the apricot, such as dried figs, dried cherries, raisins, or even fresh chopped apples. In place of the walnuts, you can try almonds, sundflower seeds, of even hazelnuts. Be inventive! 1 head broccoli, cut into small florets
⅓ cup apricots, chopped
¼ cup walnuts, roughly chopped
3 Tbsp plain yogurt
3 Tbsp balsamic vinegar
2 tsp sugar
Fill a medium-sized pot with water and bring to a boil. Add broccoli and blanch (boil) for 1 minute, no longer than 2 minutes. This will liven the color of the broccoli, bringing the green out, as well as soften it up just a bit while leaving it crisp.
Drain broccoli in a colander and rinse with cool water to stop it from cooking further. Let broccoli continue to drain while you prepare the other ingredients.
Whisk together yogurt, balsamic vinegar, and sugar in a small bowl.
Place broccoli in a medium sized bowl and toss with the yogurt mixture, apricots, and walnuts, ensuring the broccoli gets coated completely.
