Cannoli's Lighter Cousin

I was never a huge fan of cannoli. Or anything filled with a gooey center, for that matter.

Jelly-filled donuts: ick. Cannoli? No thanks.

But then I married a guy with Italian heritage… and boy does he love his pasta, gnocci, pizza and cannoli!

So I figured, if you can’t beat ’em, join ’em.

So here’s my take on a homemade, quick ‘n’ easy, lighter cannoli. It’s cousin, if you will. Cannoli's Lighter Cousin Prep time: 10 mins Cook time: 8 mins Total time: 18 mins Serves: 10 Ingredients

  • ¾c powdered sugar

  • 8oz ⅓ less fat cream cheese

  • 1 cup fat free ricotta

  • 2 tsp vanilla

  • ¼ cup mini-chocolate chips

  • Wonton Wrappers

  • 2 Tbsp melted butter

  • 1 Tbsp cinnamon mixed with 1 Tbsp sugar

Instructions

  1. Preheat oven to 400

  2. In a medium mixing bowl, blend together powdered sugar, cream cheese, ricotta, and vanilla until smooth. Cover and place in the refrigerator to set.

  3. Brush a light coat of butter on both sides of each wonton wrapper, then gently form each wrapper into a hole in a mini-cupcake pan.

  4. Sprinkle each wrapper with the cinnamon and sugar mixture.

  5. Bake wonton wrappers for 8 minutes, then let cool.

  6. Spoon 1 - 1.5 Tbsp of the cannoli mixture into each wonton and sprinkle with mini chocolate chips.

  7. Enjoy!
