Pecans are a great source of healthy saturated fats. Tofu is an excellent source of vegetarian protein. And coconut is just tasty! Baking tofu in a crust of ground walnuts and coconut is a great way to spice up dinner.
TIP: Swap out pecans for walnuts as an alternative.
This crusted tofu tastes delicious dipped in easy peanut sauce!
Coconut Pecan Tofu
Prep time: 10 mins Cook time: 35 mins Total time: 45 mins Serves: 2
Flavorful encrusted tofu.
Ingredients
1 block tofu
⅓ cup rolled oats
⅓ cup pecans
¼ cup shredded dry coconut
3 Tbsp maple syrup
¼ tsp salt
¼ tsp pepper
⅛ tsp cayenne pepper
Spray oil
Instructions
Preheat oven to 375F. Spray a baking sheet with spray oil.
Wrap tofu in paper towels and gently squeeze out water. Cut into ¾" cubes.
In a food processor, blend together oats, pecans, coconut, salt, pepper and cayenne. Place this mixture into a shallow bowl.
Roll tofu cubes in the oat mixture. You may need to press the oat mixture into the cubes to help it stick.
Place crusted cubes onto the prepared baking sheet. Spray with spray olive oil. Drizzle each cube with maple syrup.
Bake for 30-35 minutes, or until crust is slightly browned and crispy.
