Corn Bread Casserole

It took me three tries, but I finally got this recipe right! With a creamy, savory broccoli, corn, and hummus base, layer of BBQ tofu, and sweet, crispy homemade cornbread on top – it’s a delightful mix of flavors and textures. All though the corn bread is whole wheat and whole grain, it has a hint of sweet …. you’ll probably want to save it for last

Corn Bread Casserole Prep time: 10 mins Cook time: 25 mins Total time: 35 mins Serves: 2-3 Creamy and savory on the inside, sweet and crispy outside. A delicious and healthy casserole!


  • ½ c corn meal

  • ¼ c whole wheat flour

  • 2 Tbsp sugar

  • 1 tsp baking powder

  • ⅓ c buttermilk

  • ⅓ c parmesan cheese, freshly grated

  • ½ tsp cumin

  • ½ tsp chili powder

  • ½ tsp garlic powder

  • 1 block extra firm tofu, cut into small cubes and patted dry

  • 1 head broccoli, cut into small florets

  • 1 corn cob, corn cut off cob

  • ½ c hummus (any flavor!)

  • ⅓ c spaghetti sauce

  • ⅓ c barbeque sauce


  1. Preheat oven to 350F. Spray a 9x9" baking pan with spray oil

  2. Mix together the first 9 ingredients (Corn meal through garlic powder). Set aside.

  3. Brush tofu cubes with barbeque sauce.

  4. Mix together hummus and spaghetti sauce, pour over broccoli and corn, and mix well.

  5. Pour broccoli mixture in the bottom of the 9" baking pan. Layer bbq tofu next, then drop the corn bread batter on top with a spoon evenly.

  6. Bake for 20-23 minutes and then broil for 3 minutes.

  7. Enjoy!
