Corn and Feta Baked Eggs

How many ways can you cook an egg? I must admit, this was my first ‘baked’ egg – and it was not only easy, but absolutely delicious! This recipe gives the egg a delightful flavor with fresh corn, thai basil, and creamy feta. Deliciousness in a ramekin.


Corn and Feta Baked Eggs


Prep time: 8 mins Cook time: 13 mins Total time: 21 mins Serves: 2

A quick and easy yet fancy way to bake eggs with lots of flavor.


Ingredients

  • 4 eggs

  • 6 leaves chopped basil (thai basil works wonders)

  • 2 Tbsp feta cheese

  • 4 Tbsp fresh corn

  • 2 tsp cream

  • butter for preparing the ramekins


Instructions

  1. Preheat oven to 350F. Lightly prepare 2 ramekins with butter.

  2. Divide the corn, feta, and basil in half. Split one half between the two ramkins, sprinkling the mixure on the bottom.

  3. Crack two eggs into each ramekin. Sprinkle with the rest of the corn, basil, and feta.

  4. Drizzle 1 tsp cream onto the top of each to prevent the egg from burning.

  5. Bake for 8 minutes then broil for an extra 5 minutes.

  6. Enjoy!
