Healthy chicken nuggets? Whaaat?!
That’s right! When we ate these, my husband looked at me and said: “I feel like I’m eating a cheat meal!”
I have to say, the marinade for these chicken nuggets is unusual {Pickle juice and buttermilk…!}, but it worked wonders for flavor and tenderness.
Crispy on the outside and tender on the inside – with no artificial flavors or additives as you’d get with a certain fast food restaurant {*cough*McD*cough*}.
SO. GOOD.
I WILL be making these again. Crispy {healthy} Chicken Nuggets Author: Adapted from Cooking Light Prep time: 20 mins Cook time: 12 mins Total time: 32 mins Serves: 4 Ingredients
4 (6oz) chicken breasts cut into 1 inch pieces
⅓ cup buttermilk
⅓ cup pickle juice (straight from the jar!)
1.5 cups panko
¼ tsp salt
¼ tsp pepper
2 Tbsp water
1 large egg, beaten
Instructions
In a zip lock bad, combine pickle juice, buttermilk, and chicken. Close and let marinate in the fridge for 1 hour (or the whole day).
When you're ready to cook, preheat oven to 400F and prepare a baking sheet with aluminum foil.
Remove chicken from marinade, sprinkle with salt and pepper.
Place panko in a shallow dish and the egg in a separate small bowl.
Dip each chicken piece in the egg then in the panko and place in a single layer on the prepared baking sheet.
Bake for 12 - 15 minutes
