Easy Feta Polenta

Though Polenta may sound like a difficult thing to make, it actually takes less than 5 minutes! This grain is perfect as a ‘bed’ for other foods; a side that goes underneath the rest of the meal.


Simply whisk up the polenta, pour onto plates or shallow bowls and spread evenly. Let set, then place anything you’d like on top!


You could top polenta with anything from shish-kebabs to one-pot-meals such as Bean and Summer Squash Ratattouille, Veggie Lasagna (make it without the noodles and serve ontop the polenta), sauteed veggies and tofu, or even place slices of meatloaf on top.


To change up the polenta’s flavor, feel free to exchange the feta for any other type of cheese and switch the spices up to your liking. Experiment! Easy Feta Polenta Cook time: 5 mins Total time: 5 mins Serves: 4 Polenta is a great compliment to any one-pot-meal or as an alternative whole grain. Use the polenta as a 'bed' for you main meal!

Ingredients

  • 4 cups water

  • 1 cup finely ground corn meal

  • 1 tsp salt

  • 1 tsp olive oil

  • 1 tsp garlic

  • ⅓ cup crumbled feta cheese

Instructions

  1. Bring water to a boil in a pot with the salt, garlic powder, and olive oil.

  2. Add corn meal to boiling water slowly, whisking constantly. Continue to whisk vigorously for about 30 seconds, then add feta cheese.

  3. Whisk for 2 to 3 more minutes or until polenta is thickened.

  4. Pour onto a plate or shallow bowl, spread evenly. Allow to cool, then add anything on top!
