Eggs in a Nest

Eggs are a nutrient-packed protein source – and a great addition to any diet. Cooking the egg over-easy in the center of a slice of whole wheat toast makes for a fantastic, well-rounded breakfast. Not to mention a perfect way to sop up the delicious yolk.

Eggs are a nutrient-packed protein source - and a great addition to any diet. Cooking the egg over-easy in the center of a slice of whole wheat toast makes for a fantastic, well-rounded breakfast. Not to mention a perfect way to sop up the delicious yolk.


Ingredients

  • 2 slices whole wheat toaste

  • 2 large eggs

  • Spray oil

  • Salt and Pepper for taste


Instructions

  1. Cute a hole about 2 inches in diameter in the center of the bread. Save the bread circles

  2. Next, heat a saute pan over medium high heat with a coating of spray oil. Once the pan is hot, add the bread (without the center) and crack an egg into the center of the hole. The yolk will be in the center and the white will over-flow onto the bread.

  3. Add the circle cut-outs and toast them on each side.

  4. Sprinkle the Eggs in a Nest with salt and pepper and cook until the egg whites turn from clear to white. Then flip. Cook until your desired runny-ness. If you like your yolks well-done, then cook until the yolk 'buldge' in the center of the bread doesn't wiggle. For more runny yolks cook until the 'buldge' wiggles slightly.

  5. Serve with fruit!
