Feisty Whole Grain Quick Bread

Why Feisty? Because this bread is full of so much goodness that I couldn’t find a name suitable to cover it all! This moist, delicious bread has chunky peanut butter, pumpkin, molasses, wheat germ, whole wheat flour, and 10 grains. Though it may sound strange, this combination is wonderful!

What is this bread packed with?

  • Fiber from the wheat germ, whole wheat flour, 10 grain mix and pumpkin.

  • Vitamin A from the pumpkin.

  • Healthy unsaturated fats from the natural chunky peanut butter and canola oil.

  • B vitamins from the wheat germ and whole grains.

  • Iron from the molasses.

  • Vitamin Deliciousness from it all!

Feisty Whole Grain Quick Bread Prep time: 15 mins Cook time: 60 mins Total time: 1 hour 15 mins Serves: 12 to 14 A bread made with lots of love and lots of seemingly random ingredients that taste simply wonderful together.

Ingredients

  • 1 can (16 oz) pumpkin puree

  • ½ cup molasses

  • ½ cup chunky natural peanut butter

  • ¼ cup canola oil

  • 2 eggs

  • 1 cup white flour

  • 1 cup wheat flour

  • ⅓ cup wheat germ

  • ⅔ cup 10 gran hot cereal mix (or ⅓ cup oat bran plu ⅓ cup wheat bran, ground up)

  • ½ cup brown sugar

  • 2 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp nutmeg

  • 1 tsp cloves

  • ½ tsp salt

Instructions

  1. Preheat oven to 375F and prepare one large and one small bread pan with spray canola oil.

  2. In a medium bowl mix together first 5 ingredients. In a large bowl blend together the remaining dry ingredients. Mix the wet into the dry and stir until just combined.

  3. Pour into the two prepared pan and bake for 50 to 60 minutes, or until a toothpick comes out clean. The smaller bread will bake in 40 to 45 minutes.
