Fig Dough Bites

Did you know that 1/4 cup dried figs has…

  • The same calcium as 1/2 a cup of milk.

  • 4 grams of fiber – more than what’s in 1 serving of most other fruits.

  • 325 grams of potassium, which is more than 1 apple (161g), grapes, oranges, and strawberries (which all have around 250g), but less than 1 banana, which has around 554g.


Dried figs are also a great source of vitamin A as well as a pretty good source of the B vitamins. Super fruit! Fig Dough Bites Prep time: 5 mins Total time: 5 mins Serves: ~ 15 balls No bake, all whole ingredients, no added sugar - figgy deliciousness!

Ingredients

  • ¼ cup chopped dried dates

  • ¾ cup dried figs

  • ¼ cup plus 2Tbsp chopped almonds

  • ¼ cup plus 2 Tbsp chopped walnuts

  • ¼ cup toasted wheat germ

Instructions

  1. Place all ingredients, except the wheat germ, in a food processor.

  2. Process until nuts are ground and mixture is coming away from the wall. About 1 - 1.5 minutes.

  3. Scoop by the heaping teaspoon, pack together, and gently roll into balls.

  4. Place wheat germ in a shallow dish and roll each ball in it to coat.
