This hummus spread has a nice bite from the garlic scapes that’s balanced nicely by the savory, smooth chickpeas. It makes a wonderful spread for a sandwich condiment, spread for crackers, dip for pretzels, or even a nice topping for chicken or pasta.

You may be wondering: what in the world is a garlic scape? These long green tendrils are the stalks of garlic plants – they shoot up while the garlic is growing underground. The farmer will typically chop these stalks off so that more energy goes into growing the garlic bulb.
These scallion-like shoots have a garlic flavor that’s less pungent than a clove and makes a great addition to a stir fry, a pesto sauce, or even chopped and sprinkled on a fresh salad. Ingredients
1 cup garlic scapes, chopped
1 can (15 oz) chickpeas, rinsed and drained
⅓ cup pine nuts (or walnuts)
¼ cup olive oil
2 tsp grated lemon rind
½ tsp salt
⅛ tsp cayenne pepper
Instructions
Blend together garlic scapes, pine nuts, olive oil, lemon rind, salt and cayenne in a food processor until slightly chunky.
Add chickpeas and process until smooth - you can leave some small chunks of chickpeas for texture.
Enjoy on sandwiches, crackers, chicken, pasta, or as a dip for pretzels or chips!
