That’s right. We’re putting Greek yogurt to good use to pump these pancakes full of protein! In fact, these strawberry pancakes are also packed with fiber from rolled oats and omega-3 fatty acids from walnuts, too.
If you like your panckes fluffier, these may not be for you as they’re a bit more dense… though delicious nontheless!
TIP: Sprinkle some shredded coconut on top for a tasty toppping. And feel free to use any flavor Greek yogurt you’d like.
Greek Yogurt Pancakes
Prep time: 8 mins Cook time: 10 mins Total time: 18 mins Serves: 4
Moist, dense, protein-packed Strawberry pancakes. A great way to start your morning!
Ingredients
2 (6oz) Greek yogurts, flavor of your choice (I used Strawberry)
1¾ cups rolled oats
2 Tbsp canola oil
¼ cup skim milk (or milk alternative)
¼ cup sugar (Optional, but these pancakes are not particularly sweet without it.)
1 tsp baking powder
1 egg
1 egg white
1 tsp cinnamon
½ tsp nutmeg
Instructions
Combine all ingredients into a mixing bowl. Stir well, then blend with a stick blender. If you do not have a stick blender, then you can grind the rolled oats in a food processor or coffee grinder before mixing them into the batter.
(If you've already put all the ingredients together and don't have a stick blender, have no fear! Simply pulse in a blender or food processor.)
Spray canola oil or olive oil on a skillet over medium heat.
Pour batter onto heated skillet into 3" circles (Or however big or small you want them) and cook until some bubbles begin coming through to the top. CHeck the bottom of the pancake, once it's golden brown, then it's time to flip.
Enjoy with a bit of maple syrup, jelly, or a sprinkle of coconut!
