Grilled Peaches with Mascarpone Cheese

I had never thought to combine cheese with peaches until this recipe. And let me tell you, it’s an incredible combination – especially when the cheese is lightly sweet and melty on a grilled peach half. Is your mouth watering yet?

What is Mascarpone cheese? Though you may not often pick this cheese up, you’ve most likely had it in Italian Tiramisu. Mascarpone is a very rich cheese made of triple cream and can be used in both sweet and savory dishes. It can be up to 75% milk fat, which is why it’s not only utterly delicious, but also a cheese to consume in small quantities! Ingredients

  • 3 large peaches, washed, pitted, and cut in half

  • ⅓ cup mascarpone cheese

  • 1 tsp vanilla

  • 3 Tbsp sugar

Instructions

  1. Combine cheese, vanilla, and sugar in a small food processor and blend until smooth.

  2. Grill peach halves on medium high for about 3 minutes on each side. Depending on how ripe your peaches are, they may need more or less time.

  3. Fill each pit cavity with 1-2 Tbsp cheese mixture.

  4. Allow cheese to become warm and melty.

  5. Enjoy!
