Mexican Stuffed Sweet Potatoes

I’m a huge fan of quick ‘n’ easy dinners… and this one is no exception!


You can bake the sweet potatoes first; or (if your lazy like me), simply poke holes in them and stick them in the microwave for about 8-10 minutes. Done.


One Potato Meal!


Mexican Stuffed Sweet Potatoes

Prep time: 5 minsCook time: 15 minsTotal time: 20 mins Serves: 2

Ingredients

  • 2 sweet potatoes

  • 1 can no salt added black beans, rinsed and drained

  • ¾ cup water

  • 1 tsp olive oil

  • 1 tsp sesame oil

  • 1 Tbsp chili powder

  • 1 tsp cumin

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • 1 tsp pepper

  • 2 roma tomatoes, diced

  • 4 Tbsp feta cheese

  • ¼ cup plain Greek yogurt


Instructions

  1. Bake or microwave potatoes until done. If microwaving, poke holes in the potatoes with a fork and cook on high for about 9-10 minutes (you can have them in the microwave at the same time. If baking, cook at 400F for 45-60 minutes (depending on the size of the potato).

  2. Meanwhile, combine beans, water, oils, chili powder, cumin, Italian, salt and pepper in a medium sauce pan and cook over medium-high heat until thickened. About 8-12 minutes.

  3. Take potatoes out (careful, they're hot!), cut in half, sprinkle with salt and pepper, top with beans, tomatoes, feta, and Greek yogurt!
