Pecan Turtle Dough Bites

I love pecans. And I don’t just think it’s because I grew up in the south eating Pecan Pie.

They’ve got a bit of sweetness to them. Not as bitter as say… the walnut.

Nutritionally these little nuts are unrightfully outshone. They contain primarily healthy monounsaturated fats, naturally occurring antioxidants, and a decent amount of manganese, copper, and thiamin.

I would say pecans are worthy of being thrown into your nut rotation.

Which you may find irresistible… Pecan Turtle Dough Bites Prep time: 15 mins Total time: 15 mins Serves: 20 No bake dough bites made with pecans, dates and a drizzle of caramel

Ingredients

  • ¾ cup dried dates, chopped

  • ¼ cup raisins

  • ¾ cup pecans

  • 1 Tbsp unsweetened cocoa powder

  • ¼ cup coconut (for rolling - optional)

  • 5 caramel soft candies, melted (for drizzling - optional)

  • 2 tsp milk

Instructions

  1. Combine dates, raisins, pecans, and cocoa powder in a food processor. Blend until dates and pecans are ground into small pieces and the mixtures begins to come away from the food processor's wall.

  2. Unwrap caramels, place in a small bowl with the 2 tsp milk, and microwave in 30 second increments - stirring between 30 second sessions. Continue 30 second heating until desired consistency.

  3. Scoop out a heaping teaspoon of dough and gently roll into a ball.

  4. Roll in the coconut and drizzle lightly with melted caramel.

  5. Makes 20 teaspoon sized balls
