Peter's Spiced Cornby

A new variation on an old favorite: Fresh corn cut from the cob and spiced lightly with cumin, curry, and cayenne. I guess it could be called The Three C’s Corn too!

Corn, like bananas, sometimes gets a bad rap because it’s higher in carbohydrate content per serving than many other veggies. But the good news is that corn contains complex carbohydrates, providing vastly more nutritive benefits than simple sugars from white bread, processed foods, or candy. Corn is made of polysaccharides, long chains of monosaccharides (sugars) which take time to be broken down during digestion.

Corn also contains the antioxidants zeaxanthin (pronounced: Zee-A-Zan-thin) and lutein. These two plant nutrients help protect your eyes from developing age-related macular degeneration and cataracts. Also, corn has high amounts of ferulic acid which studies have shown to potentially help decrease blood pressure.

One ear of corn (about 1/2 cup) has: 83 calories, 2 grams fiber, 3 grams protein, 11% recommended Daily Value of thiamin, 9% DV folate, 7% DV pantothenic acid. Ingredients

  • 6 corn on the cob, husk and hairs removed; corn cut off cob

  • 1 Tbsp plus 1 tsp olive oil

  • ½ tsp salt

  • ½ tsp curry powder

  • ½ tsp cumin powder

  • ½ tsp cayenne powder

Instructions

  1. Cut the corn off the cob and place in a medium-sized bowl.

  2. Mix in olive oil and spiced, then microwave for about 2 minutes.

  3. Easy as cake!
