Plum Tort

Moist, tender, quick – and with the perfect blend of sweetness and bite. Pleasing everyone that tastes it, this recipe has lasted generations in my family. And who could resist a succulent cake with a crisp sugar-cinnamon crust? Not me! Plum Tort Prep time: 15 mins Cook time: 35 mins Total time: 50 mins Serves: 8 to 12 Moist, tender, quick - and with the perfect blend of sweetness and bite. Pleasing everyone that tastes it, this recipe has lasted generations in my family. And who could resist a succulent cake with a crisp sugar-cinnamon crust? Not me!

Ingredients

  • 1 cup flour (Or ½ cup white plus ½ cup wheat)

  • 1 cup sugar

  • 2 Tbsp butter

  • 2 eggs

  • 2 tsp baking powder

  • Pinch of salt

  • 3 ripe plums, deseeded and quartered (Any stone fruit will work!)

  • Sprinkle of cinnamon, sugar, and fresh squeezed lemon juice

Instructions

  1. Preheat oven to 350F. Grease a 9" spring form pan or pie dish.

  2. Cream butter and sugar. Add eggs and mix well. Add flour, baking powder, and salt. Mix until just combined. Pour into the prepared pan. Place fruit quarters ontop, skin-side up.

  3. Sprinkle with cinnamon, sugar, and lemon.

  4. Bake for 50 to 60 minutes, or until a toothpick comes out clean.
