Pumpkin Banana Squares

Moist pumpkin banana squares swirled with cream cheese. Moist. Seemingly decadent yet surprisingly healthy. How’s that for a winning combinations? I made these this morning and we’ve already eaten half the pan. We may need an intervention… Pumpkin Banana Squares Prep time: 10 mins Cook time: 30 mins Total time: 40 mins Serves: 12 These pumpkin banana squares are swirled with a high protein cream cheese topping. Just rounding out this moist, delicious yet healthful snack

Ingredients

  • 1 cup white flour

  • 1 cup wheat flour

  • ½ cup brown sugar

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1.5 tsp pumpkin spice

  • 2 eggs

  • 1 can (15 oz) pumpkin puree

  • 2 ripe bananas, mashed

  • ¼ cup canola oil

  • ⅓ cup reduced fat cream cheese

  • ⅓ cup low fat cottage cheese

  • ⅓ cup maple syrup

  • 3 Tbsp sugar

Instructions

  1. Preheat oven to 350F and prepare a 9 x 13" baking pan with spray oil.

  2. Mix together dry ingredients in a large bowl (first 6 ingredients). In a separate bowl, mix together pumpkin, eggs, bananas, and canola oil. Add these wet ingredients to the dry, mixing until just combined. Pour batter into the baking pan.

  3. In a smaller bowl, blend together reduced fat cream cheese, cottage cheese, maple syrup, and 3 Tbsp sugar until smooth. A food processor works well for this job.

  4. Drop this cream cheese batter by the spoonful onto the pumpkin batter, dotting the top. It does not have to be spread around evenly. Take a knife and swirl the topping into the batter in zig-zagging motions. Mix it in deeply to add moisture and flavor into the squares.

  5. Bake for 25 to 30 minutes, or until a toothpick comes out clean.

  6. Cut into squares and enjoy!
