Pumpkin Chili

Hearty. Warm. Savory. All great words to describe this deliciously thick soup. Oh – and EASY is another. You simply plop all the ingredients into a crock pot and let it cook all day while you’re at work (or at home, or shopping, or whatever you enjoy doing!).


With pumpkin, black beans, red beans, tomatoes, and lean grount turkey – this soup packs a powerful nutrient punch of fiber, antioxidants, vitamins, minerals and protein. All things that help to fill you up and keep you feeling satisfied. So I’d absolutely recommend packing this soup up to bring for a quick, rejuvenating lunch!


TIP: Use any 2 types of beans you’d like. Pumpkin Chili Prep time: 5 mins Cook time: 1 hour Total time: 1 hour 5 mins Serves: 8 Savory, hearty, thick soup made with pumpkin, beans, and lean turkey.

Ingredients

  • 1 package (about 1 pound) lean ground turkey

  • 1 can (15oz) pumpkin puree (not pumpkin pie mix)

  • 1 can (15oz) black beans, rinsed and drained

  • 1 can (15oz) red beans, rinsed and drained

  • 2 cans (15oz each) diced tomatoes

  • 2 cups water (Or 3.5 cups for a more 'soupy' consistency)

  • 1 cup spaghetti sauce (your favorite brand)

  • 1 small can (6oz) spicy V8 (optional but highly recommended!)

  • 1 Tbsp chili powder

  • ½ tsp red pepper flakes

  • 1 tsp oregano

  • 1 tsp basil

  • 1 tsp garlic powder

Instructions

  1. Place all ingredients into a crockpot, mix well and break up the ground turkey.

  2. Set crockpot on 6 or 8 hours.

  3. Set it and forget it!

  4. (You can also make this without the crockpot. Simply brown the meat in a dutch oven with 1 Tbsp olive oil, add the rest of the ingredients, and let simmer for about 1 hour.)

  5. Enjoy!
