Raisin Yogurt Scones

Scones may seem daunting to make, but have no fear, this recipe is quick ‘n’ easy. The yogurt creates a moist scone, a nice change from the typical dry ones. This recipe calls for strawberry Greek yogurt, but feel free to use any of your favorite flavors! Raisin Yogurt Scones Prep time: 15 mins Cook time: 25 mins Total time: 40 mins Serves: 12 A moist, delicate, easy-to-make scone with strawberry yogurt and raisins.

Ingredients

  • 2⅓ cup flour

  • ⅓ cup sugar

  • 2 Tbsp baking powder (yes, 2 tablespoons!)

  • ½ tsp cinnamon

  • ½ tsp nutmeg

  • 1 single-serving (6 oz) flavored yogurt. I used strawberry.

  • ¼ cup skim milk

  • ¼ cup canola oil

  • 6 Tbsp raisins (plump in warm water if they are too dry)

Instructions

  1. Preheat oven to 400F and prepare a baking sheet with parchment paper.

  2. In a large bowl, mix together flour, sugar, baking powder, cinnamon and nutmeg. Add yogurt, milk, and oil and mix well. Get your hands into it!

  3. Fold in raisins, remove dough from bowl, and kneed for about 2 minutes, or until dough forms a ball.

  4. Divide into four (4) balls of equal size, place on baking sheet, and pat down into ¾ inch thick disks.

  5. Cut each ball into 4 scones. Do this by cuttin once horizontally then once vertically, forming an X in the scone. Between cuts, dip the knife in flour to keep it from sticking.

  6. Bake for 25 minutes. Serve warm - but they're just as good the next day!
