Roasted Cauliflower with Raisins

A head of cauliflower can be quite daunting. It just stares at you. White florets imploring you to eat them.


But you just stare right back at it thinking… well, what the heck do I do with you anyway?


How about roasting it with a sprinkling of breadcrumbs and raisins?


{Is it just me that speaks to my vegetables in my head or do you do it as well?}


Yum. Roasted Cauliflower with Raisins Author: Adapted from Martha Stewart Prep time: 10 mins Cook time: 20 mins Total time: 30 mins Serves: 4 Crispy roasted cauliflower with breadcrumbs and raisins

Ingredients

  • 1 head cauliflower, but into florets

  • 3 Tbsp olive oil

  • 1 Tbsp Dijon mustard

  • ¼ cup bread crumbs

  • 3 Tbsp panko bread crumbs

  • 1 Tsp salt

  • ½ tsp pepper

  • ¼ cup raisins

Instructions

  1. Preheat oven to 425F

  2. On a baking sheet lined with aluminum foil, toss cauliflower florets with 1 Tbsp olive oil. Season with salt and pepper and bake for 10 minutes.

  3. In a small bowl, mix together bread crumbs, panko, 2 Tbsp olive oil, 1 Tbsp dijon, and raisins.

  4. Sprinkle bread crumb mixture over cauliflower and continue to roast, about 8-10 more minutes, or until bread crumbs are golden.
