Sauteed Fish with Zesty Orange and Soy

Cooking fish can be pretty daunting. How long do I cook it for? What kind should I use? How do I flavor it?


Well let me put your mind at ease: This recipe is easy as pie. No not fish pie. Not chocolate either. It was just a saying. Let’s just move on…


For this recipe, simply choose your favorite white fish (cod, tilapia, flounder, sole, etc), break out a large sautee pan – and then throw all the ingredients in to cook!


Ok fine… the recipe is a little more involved than that. But not much!


Sauteed Fish with Zesty Orange and Soy

Zesty sauteed fish with orange and soy


Ingredients

  • 2 tsp olive oil

  • 3 garlic cloves, minced

  • 1 Tbsp peeled, minced fresh ginger

  • ½ bunch scallions (about 5), thinly sliced, root discarded

  • ⅓ cup orange juice

  • 2 Tbsp low sodium soy sauce

  • 4 skinless fish fillets


Instructions

  1. In a large skillet, heat oil over medium heat.

  2. Add garlic, ginger, and scallions - cook until scallions begin to soften, abou 2 minutes.

  3. In a small bowl combine juice and soy sauce. Add mixture to pan and bring to a simmer. Stir to combine liquid with ginger, scallions, and garlic.

  4. Add fish, cover, and cook until opaque throughout - about 8 minutes. Baste fish with sauce occasionally.
