Savory Corn and Feta Wheat Biscuits

Sometimes you want a bit more for your breakfast or dinner than just a simple piece of toast or a plain grain. These whole wheat biscuits are savory and moist with a lovely, surprising crunch from fresh corn, creamy feta bits, and spicy thai basil. They’re a great compliment to over easy eggs; a warm, hearty soup; or a savory dinner.

And did I mention that they are quick and easy? I think that’s the best part of these soft biscuits. Savory Corn and Feta Wheat Biscuits Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 12 Moist and savory with the surprising crunch of fresh corn, bits of creamy feta, and spicy thai basil.

Ingredients

  • 1 c whole wheat flour

  • 1 c white flour

  • 4 tsp baking powder

  • 1 tsp salt

  • 1 tsp sugar

  • 3 Tbsp butter

  • 1 cup skim milk

  • ½ c corn

  • ⅓ c feta

  • 8 leave thai basil (or regular), roughy chopped

Instructions

  1. Preheat oven to 350F.

  2. Mix together both flours, baking powder, salt, and sugar. Cut in butter then mix in the milk, corn, feta, and basil until just combined.

  3. Knead for a minute or so on a floured surface. Roll out to about ¾ an inch thick and cut out 1.5" biscuits. Place biscuits on an ungreased cookie sheet.

  4. Bake for 12 to 15 minutes, or until the biscuits are golden brown.
