Summertime = delicious corn.
{Confession. I actually love frozen sweet corn. L.o.v.e it. Still frozen. Try it sometime.}
Anyway. Other than on the cob, spicing it up with a smokey chipotle chili in adobo and a squeeze of lime adds a whole lotta flava! Smokey Lime Corn Author: Adapted from Martha Stewart Prep time: 5 mins Cook time: 8 mins Total time: 13 mins Serves: 2-3 Smokey corn with a squeeze of lime
Ingredients
2 tsp olive oil
2 cups corn (fresh or frozen/thawed)
5 scallions, thinly sliced
1 chipotle chili in adobo, chopped
2 Tbsp fresh lime juice
pepper
1 Tbsp water
Instructions
In a medium pan, saute scallions in olive oil over medium-high heat for about 2 minutes, or until softened.
Add chili, stir and cook 1 more minute.
Add corn, pepper, and water, mixing. Cover and cook until corn is warmed through.
Sprinkle with lime, mix and serve!
