Spiced Salmon Rub

by ADMIN on JULY 13, 2011

Though this spice rub works wonders for salmon, it’s versatile enough to use on any of your favorite fish. And the good news is that most of these spices you may already have on hand!

This rub is complimented by a sweet smear of honey, which also helps to hold the spices on. It gives a nice, taming contrast to the zesty herbs and spices. Make extra spice rub for later use!

Spiced Salmon Rub Prep time: 5 mins Cook time: 20 mins Total time: 25 mins Serves: 3 to 4 This spice rub is a lovely companion to salmon, but also works well with many other types of fish. Double or triple the recipe to save some for later use!

Ingredients

  • 2 salmon fillets

  • 2 tsp low fat or regular mayonnaise

  • 2 tsp honey

  • ½ tsp onion salt

  • ½ tso garlic powder

  • ½ tsp lemon pepper

  • ½ tsp dried oregano

  • ½ tso dried basil

  • ¼ tsp sweet paprika

  • 1 Tbsp fresh grated parmesan cheese

Instructions

  1. Heat grill to medium heat (or heat oven to 350F)

  2. Place salmon fillets on a sheet of aluminum foil, skin side down. This will make it easier to remove the fish from the grill or baking sheet - and easier clean up!

  3. Spread 1 tsp mayo on each fillet. Then spread 1 tsp honey on each fillet.

  4. In a small bowl, mix togehter onion salt, garlic powder, lemon pepper, oregano, basil, and paprika. Then sprinkle over the salmon fillets.

  5. Cook salmon on grill or in oven for about 10 minutes per inch of fish thickness.

  6. The fish will be light pink and will flake easily when done.

  7. Once finished cooking, sprinkle with parmesa cheese!

  8. Serve with a big heaping of delicious veggies.

Enjoy!
