Springtime Chickpea ‘Guacamole’ Salad

Okay. So this picture really doesn’t do justice for the delicious, crisp taste of this salad. So… just try to

image this:

Crunchy, sweet carrots; tender, savory chickpeas; and tart lemon all married by a avocado smashed

base with a sprinkle of salt and pepper.

Does that sound better? Because believe me, if you like these ingredients, you’ll enjoy this recipe!

Works perfectly as a pita filling, topping to a leafy salad, or just straight-up out of the bowl (which might

have happened in my house…).

Springtime Chickpea 'Guacamole' Salad

Prep time: 10 mins Total time: 10 mins Serves: 2-4


  • 1 ripe avocado, smashed

  • 1 can No Salt Added chickpeas, drained and rinsed

  • Juice of ½ a lemon

  • 2 carrots, chopped

  • ⅓ cup feta cheese, crumbled

  • salt and pepper


  1. Mix together all ingredients in a medium-sized bowl.

  2. Add salt and pepper to taste.

  3. Enjoy on bread, on a salad, or straight from the bowl!
