Sweet Potato Crusted Fish

Sweet potatoes are wonderful. Fish is also wonderful. But sweet potatoes ON fish? Now we’re talking! Whether grilled or baked, this potato encrusted fish recipe comes out looking fabulous and yet is extremely easy to make. Not to mention healthy. What more could you ask for?

Sweet Potato Crusted Fish Prep time: 15 mins Cook time: 20 mins Total time: 35 mins Serves: 4 A fancy yet simple dinner to spice up your evening.

Ingredients

  • 1 pound salmon (or any fish you prefer, I have used swordfish as well)

  • 2 medium sweet potatoes, baked or microwaved until soft enough to mash

  • ⅓ cup 1% or skim milk

  • 3 garlic cloves, minced

  • ½ tsp salt

  • ½ tsp pepper

  • ⅛ tsp cayenne (optional)

  • ⅛ tsp cumin (optional)

  • 3 Tbsp freshly grated parmesan chese

Instructions

  1. Preheat grill to medium high (or preheat oven to 350F)

  2. In a medium bowl, mash together sweet potatoes, milk, garlic cloves, salt, pepper, cayenne, and cumin.

  3. Place fish skin-side down on a sheet of aluminum foil (on a pan covered in aluminum foil if baking).

  4. Spread the potato mixture evenly over the fish, then sprinkle with parmesan cheese.

  5. Grill for 20 minutes (about 10 minutes per inch thickness plus 5 minutes more since it's covered in potatoes). If baking, bake for 18 then broil for 5 or until potatoes are just golden.

  6. Serve with a heaping side of veggies!
