Most hummus’s are savory pots of goodness. But I had left over coconut milk and really wanted to try something different. Hence was born a sweeter-than-normal bean dip with coconut, pecans, and a delicious hint of maple syrup. This dip is fantastic with sweeter crackers (such as graham) but also make a perfect contrast to salty pretzels!
TIP: Taste it before taking it out of the food processor and add what you think would make it the perfect dip _for you_! Sweet(ish) White Bean Dip Prep time: 10 mins Total time: 10 mins Serves: 12 Creamy white bean dip with coconut, pecans, and a hint of maple syrup.
Ingredients
1 can (15oz) cannellini beans, drained and rinsed
¼ cup low fat cottage cheese
2 oz (1/3 less fat) cream cheese
2-3 tsp lemon juice
⅓ cup chopped pecans
¼ cup light coconut milk
3 Tbsp unsweetened shredded coconut
2-3 Tbsp maple syrup
¼ tsp cayenne pepper
¼ tsp pepper
Instructions
Place all ingredients into a food processor and blend until your desired smoothness is achieved.
Taste and season more if needed.
