Tofu Sloppy Joes

I originally thought there’s no way the words ‘tofu’ and ‘sloppy joe’ could go together… but after trying this recipe I know they’re a great pair! Tofu crumbles very nicely, picking up savory flavors and seasoning is a delicious mush — perfect for a sandwich dinner!


TIP: Be sure to have plenty of napkins on hand!


Tofu Sloppy Joes

Prep time: 5 mins Cook time: 20 mins Total time: 25 mins Serves: 3

Crumbled tofu with savory seasonings - perfect for a sloppy, messy, delicious dinner!


Ingredients

  • 1 block firm tofu

  • 3 garlic cloves, minced

  • ¼ cup parsley, chopped

  • ¼ cup catsup

  • ½ cup spaghetti sauce

  • 1 Tbsp soy sauce

  • 1 Tbsp jalapeno, minced

  • 1 Tbsp olive oil

  • 2 tsp brown sugar

  • 2 tsp cider vinegar

  • 1 tsp dijon mustard

  • 1 tsp Italian seasoning

  • 6 slices whole wheat bread

  • 1 tsp chili powder


Instructions

  1. Mash the tofu in a medium bowl and set aside.

  2. In a large saute pan or wok, saute garlic in olive oil until fragrant - about 3 minutes. Then add mashed tofu and jalapeno. Cook for about 5 minutes.

  3. Add all other ingredients and cook for about 5 to 8 minutes, stirring frequently. Until most liquid is absorbed - but the mixture is still 'sloppy'.

  4. Serve on toasted whole grain bread, a side of veggies, and plenty of napkins!
