I originally thought there’s no way the words ‘tofu’ and ‘sloppy joe’ could go together… but after trying this recipe I know they’re a great pair! Tofu crumbles very nicely, picking up savory flavors and seasoning is a delicious mush — perfect for a sandwich dinner!
TIP: Be sure to have plenty of napkins on hand!

Crumbled tofu with savory seasonings - perfect for a sloppy, messy, delicious dinner!
Ingredients
1 block firm tofu
3 garlic cloves, minced
¼ cup parsley, chopped
¼ cup catsup
½ cup spaghetti sauce
1 Tbsp soy sauce
1 Tbsp jalapeno, minced
1 Tbsp olive oil
2 tsp brown sugar
2 tsp cider vinegar
1 tsp dijon mustard
1 tsp Italian seasoning
6 slices whole wheat bread
1 tsp chili powder
Instructions
Mash the tofu in a medium bowl and set aside.
In a large saute pan or wok, saute garlic in olive oil until fragrant - about 3 minutes. Then add mashed tofu and jalapeno. Cook for about 5 minutes.
Add all other ingredients and cook for about 5 to 8 minutes, stirring frequently. Until most liquid is absorbed - but the mixture is still 'sloppy'.
Serve on toasted whole grain bread, a side of veggies, and plenty of napkins!
