was scrolling through some tofu recipes, looking for something new to make, when an idea struck: Tofu spring rolls! And what better to accompany that than peanut dipping sauce.

This recipe has a lot of flavor – a zesty flavor in the spring roll from lemon and garlic; and a nice savory-sweet flavor from the peanut sauce. Such a wonderful combination. I probably dipped my finger into the sauce a few times before I served it. Shhh… don’t tell my husband! Family germs, right?
Tofu Veggie Spring Rolls with Peanut Dipping Sauce
Prep time: 30 mins Total time: 30 mins Serves: 3
Tofu ground with carrots, broccoli, hummus and lemon, rolled into a spring roll and dipped into a delicious peanut sauce. Mm!
Ingredients
1 block tofu, drained
⅓ cup humms, any flavor
10 baby carrots (or about 2.5 whole carrots, peeled and roughly cut)
1 head broccoli florets, rinsed and roughly chopped
2 Tbsp lemon
3 cloves garlic, minced
1 tsp dried rosemary, crushed
⅛ tsp cayenne pepper
½ tsp salt and pepper
1 tsp cumin
10 spring roll wrappers
Instructions
Mash tofu in a large mixing bowl.
Add carrots, broccoli, lemon juice, and hummus in a food processor. Pulse until vegetables are a gritty consistency (very finely chopped).
Add veggies to tofu and add spices. Stir well to combine. Place about 3-4 Tbsp of the mixture into each spring roll and wrap tightly.
