Whole Grain Breakfast Banana Bread Pudding

Delicious enough to be dessert and healthy enough to be breakfast. Perfect combination if you ask me! The protein will help you going strong through your morning and the whole grain will provide the energy boost you need to get the day started right.

Bananas sometimes get a bad rap because they’re a bit higher in carobohydrates than other fruits – but their health benefits outweight the perceived ‘detriments’- so feel free to enjoy! Bananas grow in bunches of 15 to 150 called ‘hands’. That’s a lot!


They’ve also been recognized for antacid properties. Some phytochemicals (plant nutrients) in bananas activate cells in the stomach lining, helping to produce a protective layer of mucus which guards against stomach acids. “Naners also contain protease inhibitors, a compoud that helps eliminate ulcer-causing bacteria in the stomach.


Nutritionally, these babies are high in Fructooligiosaccharides (FOS), a prebiotic that helps nourish the good bacteria in your gut, resulting in better digestion. And although green bananas may not taste as good, they have short chain fatty acids (SCFAs), which are the primary fuel source for the intestinal cells. Keep those cells healthy and you’ll be improving absorption of nutrients dramatically!


One medium banana (about 7″) has: 105 calories, 3 g fiber, 1 g protein, 22% of the recommended Daily Value of B6, 17% DV Potassium, 16% DV manganese.



Whole Grain Breakfast Banana Bread Pudding

Prep time: 5 mins Cook time: 30 mins Total time: 35 mins Serves: 4

Delicious enough to be dessert and healthy enough to be breakfast. Yes! This breakfast will have you going strong all morning, increasing your energy and productivity.


Ingredients

  • 5 slices whole wheat bread, cut into small cubes

  • 3 ripe bananas, mashed well

  • 1 cup low fat cottage cheese

  • ½ cup skim milk (or milk alternative)

  • ¼ cup wheat germ

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • ½ tsp nutmeg


Instructions

  1. Preheat oven to 350F. Prepare a 9" x 9" baking dish by greasing.

  2. Mix all ingredients except bread. Then add bread and combine well.

  3. Bake for 30 minutes.

  4. Serve with fresh fruit! We had ours with ripe-from-the-farm peaches.
