Zesty Lemony Snap Peas

Snap peas are one of my favorite veggies.

Crunchy. Sweet. Raw. Cooked.

So versatile!

This recipe is pulled together by zesty lemon and a dash of Dijon. Lemony Snap Peas Author: adapted from Cooking Light Prep time: 10 mins Cook time: 30 mins Total time: 40 mins Serves: 4 Zesty lemony sugar snap peas


  • 8 oz water

  • 12 oz sugar snap peas, trimmed

  • Zest of half a lemon

  • 2 Tbsp fresh lemon juice

  • 2 tsp olive oil

  • 1 tsp Dijon mustard

  • ½ tsp sugar

  • ¼ tsp salt

  • ¼ tsp black pepper


  1. Bring water to a boil in a medium pot. Add peas and blanch for 30 seconds.

  2. Drain then rinse with cold water.

  3. Combine lemon rind and all remaining ingredients in a medium bowl, whisk.

  4. Add pea and toss to coat.
