Best Meatloaf Ever {Personal Size}

Meatloaf isn’t a very photogenic food.


Neither is it a much respected food. In fact, I didn’t give it a chance for most of my life. Meat loaf, I thought, was a disgusting pile of meat. Dry. Boring.**


Let me tell you: I’ve been missing out.


These are more like glorified meatballs. And the secret ingredient for the most moist and delicious meat loaf ever? Butternut Squash.


That’s right. And you won’t even taste it.


Oh… and my small obsession with chipotle chilis in adobo sauce lives on in this recipe. Bring the heat!


{**Except the stuff that you made, mom – that meatloaf was delicious!} Best Meatloaf Ever {Personal Size} Prep time: 15 mins Cook time: 30 mins Total time: 45 mins Serves: 4 Ingredients

  • 1 pound lean ground grass-fed beef

  • 2 cups finely chopped, peeled butternut squash (chopped in a food processor)

  • 1 Chipotle Chili in Adobo Sauce, finely diced

  • ½ a yellow onion, diced

  • 2 garlic cloves, diced

  • ¼ cup chopped curly parsley

  • 1 tsp oregano

  • ½ tsp each salt and pepper

  • ½ cup panko breadcrumbs

  • 1 Tbsp olive oil

  • 4 Tbsp ketchup, divided

Instructions

  1. Preheat oven to 425F

  2. Saute onions and garlic in olive oil for about 3 minutes. Add butternut squash and chipotle chili, stirring well, and cook for another 8 minutes. Remove from heat and let cool slightly.

  3. Mix all ingredients together in a large bowl except for the ketchup. (butternut squash mixture, beef, breadcrumbs, salt, pepper, parsley, oregano)

  4. Spray 4 ramekins with olive oil, then divide mixture between the 4 ramekins.

  5. Spread 1 Tbsp ketchup on top of each personal meatloaf.

  6. Bake for 30 minutes.
