Corn and Fig Bulgur Salad

Are you sick and tired of making a boring grain for your side dish? Are you looking for something new, exciting, and perhaps a bit exotic? Then By Jove do I have a great recipe for you!


This recipe has been swirling around in my head for the past couple weeks and I finally got out my measuring cups to make it for the Stoneham Farmers Market!


While most grain recipes are savory, this one brings out bulgur’s sweeter side with a hint of honey, cinnamon, and dried figs balanced out by lime juice, walnuts, and corn. You’ll love it!! (Everyone at the Farmers Market did, too!).

Corn and Fig Bulgur Salad Prep time: 20 mins Cook time: 40 mins Total time: 1 hour Serves: 6 Bring out a sweet-kissed side dish by combining bulgur with dried fig, cinnamon and a dab of honey. Lime and walnuts provide a beautiful contrast.

Ingredients

  • 1 cup dry bulgur

  • 1 cup apple juice (or other 100% juice such as mixed berry)

  • 1 cup water

  • 1 tsp cinnamon

  • 3 ears of corn, shucked and kernels cut off the cob

  • ¾ cup dried figs, chopped

  • 1 cup walnuts, chopped

  • 2 Tbsp fresh squeezed lime juice

  • 1 tsp lime zest

  • 1.5 Tbsp honey

  • 1.5 Tbsp olive oil

Instructions

  1. Combine bulgur, water, and juice in a sauce pan. Bring to a boil then remove from heat and cover. Let sit for about 30 to 40 minutes or until the bulgur has absorbed all the liquid. When the bulgur is done cooking, fluff with a fork and let cool.

  2. Place the corn kernels in a microwave safe bowl, cover with seran wrap, and heat for 2 minutes. Corn can also be used raw.

  3. Whisk together lime juice, zest, honey, and olive oil in a small bowl.

  4. Combine bulgur with figs, walnuts, and the lime sauce - gently mix until all ingredients are combined well.

  5. For best taste, allow to sit for an hour or overnight in the refrigerator to let all the flavors combine.

  6. Enjoy!
