Gingerbread Pumpkin Trifle

This is an absolute crowd-pleaser. Has the wonderful flavors of fall, yet is a cool dessert that tastes just wonderful in the summer too. What’s great about trifles is that you can create any flavor combination you want! You could substitute the gingerbread for vanilla or chocolate cake; instead of pumpkin you could use any flavor pudding; and dont forget to add delicious fresh fruit as a layer as well. Experiment! Ingredients

  • 1 package gingerbread mix

  • 1 box vanilla pudding (low sugar or regular)

  • 1 (30 oz!!) can of pumpkin puree

  • ½ cup brown sugar

  • ⅓ tsp cardamom or cinnamon (or both!)

  • 1 (12 oz) contianer of frozen cool whip

  • ½ cup ginger snap cookies

Instructions

  1. Bake the gingerbread mix according to the package, then let cool. Meanwhile, make the pudding and set aside to set. Feel free to use skim milk to help 'healthify' the recipe.

  2. Once the pudding is set, stir in the pumpkin, brown sugar, and spices to the pudding.

  3. Crumble half the gingerbread into the bottom of the trifle bowl. Then layer half the pumpkin mix, then half the whipped topping. Repeat each layer once more.

  4. Add some ginger snap cookies on top.

  5. For best result, allow to sit in the refrigerator over night to allow the gingerbread to soak up the great flavors. But it can be served right away, too.
