Ingredients

  • ¾ cups almond butter

  • 4 cups rolled oats

  • 1 cup brown sugar

  • 1½ tsp vanilla

  • 2½ Tbsp canola oil

  • 2 eggs

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • ¾ cup shredded coconut

Instructions

  1. Preheat oven to 350F

  2. Mix together all ingredients. Use a KitchenAid if possible as the batter will be thick. Drop dough in 1 to 1.5 inch balls onto a non-stick or parchment paper-lined baking sheet. Flatten each to the same thickness using a fork.

  3. Bake for 13 to 15 minutes.
