Ingredients
¾ cups almond butter
4 cups rolled oats
1 cup brown sugar
1½ tsp vanilla
2½ Tbsp canola oil
2 eggs
2 tsp cinnamon
1 tsp nutmeg
¾ cup shredded coconut
Instructions
Preheat oven to 350F
Mix together all ingredients. Use a KitchenAid if possible as the batter will be thick. Drop dough in 1 to 1.5 inch balls onto a non-stick or parchment paper-lined baking sheet. Flatten each to the same thickness using a fork.
Bake for 13 to 15 minutes.
