Not a tofu fan but love kalamata olives and feta cheese? Well this recipe may be the perfect gateway recipe into tofu love! Sauteing the spinach in a bit of kalamata olive juice is the secret to this intensely flavored dish.
Enjoy this dish with a side of veggies and perhaps a whole grain!
Mediterranean Stuffed Tofu

Kalamata olives, spinach and feta make this tofu a delicious dish!
Ingredients
1 block extra firm tofu, cut in half horizontally then vertically, so you have 4 thin rectangle. Gently squeeze dry each peice between paper towels.
3 cups fresh spinach, roughly chopped
2 cloves garlic, minced
1 onion, chopped
¼ cup kalamata olives, roughly chopped
3 Tbsp kalamata olive juice from the jar
2 tsp olive oil
¼ cup fet cheese
1.5 tsp garlic powder
1 tsp salt, 1 tsp pepper
Instructions
Preheat oven to 375F
Saute onions and garlic in olive oil over medium heat until translucent, about five minutes. Add ½ tsp salt, ½ tsp pepper, olives, olive juice, and chopped spinach. Saute for another 3 minutes, stirring, until spinach is wilted and flavors are combined well.
Sprinkle 2 rectangles of tofu lightly with salt, pepper, and garlic powder. Place tofu, spiced side down, on a greased baking sheet or meatloaf pan.
Top each tofu peice with spinach mixture and feta, then top with the last 2 peices of tofu. Spinkle lightly with salt, pepper, and garlic powder.
Bake for 35 minutes.
