Savory Chicken with Artichokes

I don’t know about you, but I love marinated artichoke hearts. So when I found an opportunity to combine them with a meal, I jumped at the chance. This meal has a lovely savory taste and the chicken is so tender and delicious. It’s a quick and easy dinner option! Savory Chicken with Artichokes Author: Adapted from Ellie Deaner Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Serves: 3 A savory, tender chicken dish the whole family will enjoy!


  • 1 lb boneless chicken breast, cut into 1.5" pieces, skin removed, fat cut off

  • 2 Tbsp flour (white or wheat)

  • 1 tsp chili powder

  • 1 Tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tsp oregano

  • 13 oz can quartered marinated artichokes

  • 2 Tbsp lemon juice

  • ½ cup broth


  1. Combine flour and chili powder in a small shallow dish. Dredge chicken pieces in the flour mixture.

  2. Heat medium-sized pan with olive oil over medium-high heat, add garlic and saute for about 2 minutes. Add chicken and oregano and saute until chicken is golden brown on each side, about 4 minutes (2 to 3 minutes per side).

  3. Add artichoke halves, lemon juice, and broth. Simmer for 5 to 7 minutes, or until chicken is cooked through and tender.

  4. Enjoy with a side of your favorite veggies! We had ours with sauteed onion, garlic, yellow squash, and carrots with seasoning. Delish!
