Strawberry Blueberry Crumble

Homemade ice cream (!).


Pie.

My mouth is watering again.

Delicious and healthified.

Bring it to your next BBQ or potluck – (or hoard it for yourself) – either way, you won’t be disappointed! Strawberry Blueberry Crumble Prep time: 20 mins Cook time: 50 mins Total time: 1 hour 10 mins Serves: 8-10 Juicy berry crumble.

Ingredients

  • FILLING:

  • 32 oz strawberries, rinse, tops cut off, and quartered

  • 1 pint blueberries, rinsed

  • ⅓ cup sugar

  • Zest and juice of half a lemon

  • 3 Tbsp flour

  • CRUMBLE:

  • 1.5 cup rolled oats

  • ⅓ cup brown sugar

  • 2 Tbsp maple syrup

  • ¼ cup Earth Balance spread (or other)

  • 1 tsp cinnamon

  • ½ cup flour (spelt, almond, or wheat)

Instructions

  1. Preheat oven to 350F and prepare a pie dish with either a smidge of butter, buttery-spread, or spray canola oil.

  2. Place strawberries, blueberries, sugar, and lemon into a bowl. Mix well and let sit while you prepare the crumble. (at least 8 minutes)

  3. Mix together all ingredients for the crumble until well combined.

  4. Mix 3 Tbsp flour into the berries, pour berries into the prepared pie plate.

  5. Drop crumble on top by the teaspoon full until the pie is covered.

  6. Place pie plate on a cookie sheet lined with aluminum foil (to catch any drips!) and bake for 50 minutes.
