Homemade ice cream (!).
My mouth is watering again.
Delicious and healthified.
Bring it to your next BBQ or potluck – (or hoard it for yourself) – either way, you won’t be disappointed! Strawberry Blueberry Crumble Prep time: 20 mins Cook time: 50 mins Total time: 1 hour 10 mins Serves: 8-10 Juicy berry crumble.
32 oz strawberries, rinse, tops cut off, and quartered
1 pint blueberries, rinsed
⅓ cup sugar
Zest and juice of half a lemon
3 Tbsp flour
1.5 cup rolled oats
⅓ cup brown sugar
2 Tbsp maple syrup
¼ cup Earth Balance spread (or other)
1 tsp cinnamon
½ cup flour (spelt, almond, or wheat)
Preheat oven to 350F and prepare a pie dish with either a smidge of butter, buttery-spread, or spray canola oil.
Place strawberries, blueberries, sugar, and lemon into a bowl. Mix well and let sit while you prepare the crumble. (at least 8 minutes)
Mix together all ingredients for the crumble until well combined.
Mix 3 Tbsp flour into the berries, pour berries into the prepared pie plate.
Drop crumble on top by the teaspoon full until the pie is covered.
Place pie plate on a cookie sheet lined with aluminum foil (to catch any drips!) and bake for 50 minutes.
