Swordfish, like salmon, is relatively high in omega-3 fatty acids. When topped with kalamata olives, sun dried tomato spread, and a sprinkle of parmesan cheese, you’ve got a melt-in-your-mouth meal!
Sundried Tomato Swordfish Prep time: 5 mins Cook time: 25 mins Total time: 30 mins Serves: 2 to 3 Sundried tomatoes make the not-so-secret but very-delicious main ingredient in this recipe.
Ingredients
1 pound swordfish
3 Tbsp freshly grated parmesan cheese
¼ cup kalamata olives, chopped
¼ cup sundried tomato spread (such as California Sun-Dried Tomato Spread)
Salt and pepper to taste
Instructions
Preheat oven to 350F
Spread sundried tomato spread over swordfish in a light layer. Sprinkle with chopped olives.
Bake for about 20 minutes, then sprinkle with parmesan cheese and broil for another 5 minutes.
Enjoy with a big side of veggies!
