Sundried Tomato Swordfish

by ADMIN on JULY 13, 2011

Swordfish, like salmon, is relatively high in omega-3 fatty acids. When topped with kalamata olives, sun dried tomato spread, and a sprinkle of parmesan cheese, you’ve got a melt-in-your-mouth meal!

Sundried Tomato Swordfish Prep time: 5 mins Cook time: 25 mins Total time: 30 mins Serves: 2 to 3 Sundried tomatoes make the not-so-secret but very-delicious main ingredient in this recipe.

  • 1 pound swordfish

  • 3 Tbsp freshly grated parmesan cheese

  • ¼ cup kalamata olives, chopped

  3. Bake for about 20 minutes, then sprinkle with parmesan cheese and broil for another 5 minutes.

  4. Enjoy with a big side of veggies!
