Walnut Encrusted Tofu

Crunchy outside; springy, moist inside. Spiced outside; cool inside. Omega-3 smothered outside; protein packed inside. Fiber full outside; antioxidants on the inside. And only 30 minutes until you can eat it all up!

This tofu is a great mix of flavors, textures and nutrients – a deliciously healthy addition to your meal!

Walnut Encrusted Tofu

Prep time: 10 mins Cook time: 28 mins Total time: 38 mins Serves: 2 to 3

Cubed tofu with a crunchy, spiced crust.


Ingredients

  • 1 block firm tofu, cubed and patted dry

  • ⅓ cup rolled oats, dry

  • ⅓ cup chopped walnuts

  • ½ tsp nutmeg

  • ⅛ tsp cayenne pepper

  • ⅛ tsp salt

  • Spray olive oil


Instructions

  1. Preheat oven to 400F. Line a baking sheet with aluminum foil and spray lightly with olive oil.

  2. Blend oats, walnuts, nutmeg, cayenne pepper, and salt in a small food processor until it forms a gritty texture.

  3. Pour oat mixture into a shallow bowl.

  4. Roll tofu cubes in the mixture, pressing to coating each side well.

  5. Set the encrusted cubes on the baking sheet, then spray each side lightly with spray olive oil.

  6. Bake for 25 minutes, then broil for another 3 to 4 minutes, or until the crust is lightly browned.

Enjoy with your favorite veggie. We had ours with sweet potato fries!
