Snap peas are one of my favorite veggies.
Crunchy. Sweet. Raw. Cooked.
So versatile!
This recipe is pulled together by zesty lemon and a dash of Dijon. Lemony Snap Peas Author: adapted from Cooking Light Prep time: 10 mins Cook time: 30 mins Total time: 40 mins Serves: 4 Zesty lemony sugar snap peas
Ingredients
8 oz water
12 oz sugar snap peas, trimmed
Zest of half a lemon
2 Tbsp fresh lemon juice
2 tsp olive oil
1 tsp Dijon mustard
½ tsp sugar
¼ tsp salt
¼ tsp black pepper
Instructions
Bring water to a boil in a medium pot. Add peas and blanch for 30 seconds.
Drain then rinse with cold water.
Combine lemon rind and all remaining ingredients in a medium bowl, whisk.
Add pea and toss to coat.
